Coconut Lime Energy Bites

With the Summer approaching I thought it would be a good time to share my recipe for Coconut Lime Energy Bites. This pop of flavor is like Summer in your mouth! I love energy bites because they are highly customizable and versatile, allowing you to tailor them to your personal preferences and dietary needs. You can experiment with different combinations of ingredients, flavors, and textures to create a variety of delicious options.

Energy balls often contain a variety of nutrient-rich ingredients, such as nuts, seeds, and superfoods like chia seeds or cacao powder. These ingredients are packed with vitamins, minerals, and antioxidants that support overall health and well-being. For example, nuts and seeds are excellent sources of healthy fats, protein, and fiber, while dried fruits provide natural sweetness along with vitamins and minerals.

The combination of healthy fats, protein, and fiber in energy balls can promote feelings of fullness and satiety. These nutrients help stabilize blood sugar levels, preventing energy crashes and reducing cravings for unhealthy snacks. 

Energy balls can serve as a healthier alternative to traditional processed snacks like candy bars, cookies, or chips. By making your own energy balls or choosing ones made with wholesome ingredients, you can avoid artificial additives, preservatives, and excessive sugar. This makes energy balls a more nutrient-dense and nourishing choice for satisfying your snack cravings.

Want to add almonds or walnuts, go ahead! Mix up the nuts to make a cup total. Add a few tablespoons of chia seeds and flax seeds to give these bites more fiber and protein.

Ingredients:

1 cup raw cashews

1 cup dates*

3⁄4 cup unsweetened coconut, divided

Juice and zest from 1 lime (2 tablespoons juice & 1 tablespoon zest)

 * If the dates are dry, soak in warm water first.


Directions:

1. Put the cashews in a food processor and process until mostly broken down. Add

the dates and process until they come together to form a dough.

2. Add 1⁄2 cup of the coconut and the lime juice and zest and process until well

mixed.

3. Scoop out heaping teaspoons of dough and form into balls. Roll each ball in

remaining coconut.

4. Store in an airtight container in the fridge.
